Banana bread recipes

Recipes using bananas, including banana puddings and Banana Crepes With Brown Sugar Rum Sauce

Banana Bread Recipe

Ingredients

3 or 4 ripe bananas, mashed

1/3 cup melted butter

3/4 cup sugar (more can be added to taste but remember banana is sweet anyway!)

1 beaten egg

1 teaspoon vanilla  essence

1 teaspoon baking soda

Pinch of salt

1 1/2 cups of all-purpose flour

Method

Preheat the oven to 350°F (175°C). Mash the butter and bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. (be quick or the banana will turn brown) Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last and give it a good mix.

Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour.

Leave to cool for about 20 min's then turn out and cool on a rack.
