Chicken in white wine
30ml (2tbsp) olive oil
1 clove of garlic - skinned and crushed
4 chicken breasts
450g (1lb) pork sausages
300ml (1/2 pint) light dry white wine
100g (4oz) mushrooms - sliced
2.5ml (1/2 level tbsp salt
4 toast slices - cooked slowly to dry out and make crispy
4 level tsp cornflour
45ml (3tbsp) water
Method...
Heat the oil in a large pan, add the garlic and cook until golden.
Add the chicken breasts and seal turning once. Add the sausages and seal
until brown all over.
Spoon of about 2-3 tbsp of the cooking liquid taking care to get as much of
the fat as possible.
Add the wine, mushrooms and salt. Bring to the boil, cover and simmer for
about 30 minutes basting occasionally.
Arrange the toast pieces on plates and place the chicken on top.
Mix the corn flour with water and gradually stir into the pan juices. Heat
gently stirring until thickened.
Spoon the sauce over the chicken breasts and serve immediately.
