Chicken and rice soup

This is actually a very simple quick and easy chicken soup that is made more hearty by the inclusion of rice.

Chicken and rice soup

1.1 litres (2pints) good quality chicken stock

50g (2oz) long grain rice

Salt and Freshly ground black pepper

2 egg yolks beaten

Juice of 1 lemon

Method...

Bring the chicken stock to the boil and add the rice and seasoning. Cook until the rice is just tender.

Remove from the heat and allow to cool for a few minutes.

Pour the stock and rice over the egg yolks, whilst whisking gently.

Add the lemon juice and server immediately.

Optional lemon slices can be used for the garnish.

Eat with chuncky torn fresh bread and butter.
