Baked Chicken

6 Chicken portions

25g (1oz) seasoned flour

1 egg beaten

100g (4oz) fresh white breadcrumbs

50-75g (2-3oz) butter or bacon fat

Method...

Coat the chicken portions with the seasoned flour, then dip into the beaten egg and coat with breadcrumbs.

Melt the butter or bacon fat in a roasting pan and get to a high temperature.

Lay your chicken portions in the hat fat and baste.

Bake at 200*c (400*f) gas mark 6 turning twice and basting occasionally.

Cook for approximately 45 minutes antil tender and the juice runs clear.
