Chicken cacciatore is one of those quick and easy
dishes that once prepared and in the pot cooks itself. Personally, i think the
dish benefits from being cooked one day but eaten the next. This gives the dish
a chance to mature. Just remember to re-heat until piping hot.
Chicken Cacciatore
250 g flour for coating
tsp salt
tsp ground black pepper
1 whole chicken, cut into pieces
30 ml vegetable oil
1 onion, chopped
2 cloves garlic, crushed
green bell pepper, chopped 1
(14.5 ounce) can diced tomatoes
Large pinch dried oregano
120 ml white wine
190 g fresh mushrooms, quartered, whole if button mushrooms are used
salt and
pepper to taste
DIRECTIONS
Combine the flour, salt and pepper.
Dredge the chicken pieces in the flour until coated.
Heat the oil in a large skillet or saucepan(one that has a
lid).
Fry the chicken pieces in hot oil until they are browned on both sides.
Remove
from pan.
Add the onion, garlic and bell pepper (i like red) to the skillet and saut
until the onion is slightly browned.
Return the chicken to the skillet and add
the tomatoes, oregano and wine.
Cover and simmer for 45 minutes over medium low
heat.
Add the mushrooms and salt and pepper to taste. Simmer for 10 more
minutes.
Celery can give this dish a lift, just a couple of stalks cut rough and added
half way through cooking.
