Cold raspberry soup
1.1kg (2.5lbs) fresh or frozen raspberries
400ml (3\4pint) of port or sweet sherry
25-50g (1-2oz) sugar
2 sticks of cinnamon cut in half
2 Level tsp of cornflour
100ml (4fl oz) water
Method...
Place the raspberries, port/sherry and sugar into a large saucepan. Add the
cinnamon sticks and bring to the boil over a medium heat.
When boiling, reduce the heat and simmer gently for about 10 minutes.
Remove the cinnamon sticks and pass the remaining liquid through a sieve to
remove the pips.
Return to the pan.
Mix the cornflour and cold water and slowly stir into the soup.
Bring back to the boil, stirring frequently.
Once thickened, remove from the heat, allow to cool completely, the
refrigerate.
When you are ready to serve, you can add a little cream or soured cream.
