Mini Butterfly Cakes
Mini Butterfly Buns
Butterfly cakes are a big favourite in my house. We like to make them together as a family and put different colour icing in to make the butterflies more pretty.

4oz/100g caster sugar
4oz/110g soft margarine
2 eggs
4oz/100g self raisning flour
1 teaspoon of baking powder

For the icing

6oz/175g butter
12oz/350g icing sugar
food colouring of your choice.


Pre-heat oven to 200°c/400°f/gas 6
Place your paper cases into a bun tin.
Measure all the ingredients into mixing bowl and mix for 2/3 minutes until the mixture is smooth.
Half fill the paper cases with the mixture.
Bake in the oven for 15/20 minutes until well risen and golden.
Lift your cakes out onto a wire rack to cool.
To make the icing put butter and icing sugar into mixer and mix until well blended.
Add food colouring of your choice and mix well in.
Cut a slice from the top of each cake and cut this slice in half to make the wings.
Place some butter cream into the centre of each cake and place the half slices into the butter cream at an angle to look like the wings.
Sprinkle with icing sugar or if like us you are chocoholics drizzle melted choc onto the wings.
