Shellfish

 

Shellfish fall into two basic categories, crustaceans and molluscs.

Crustaceans: Have a jointed, fragile external skeleton and include the following:

Prawns and shrimps, these can vary in size considerably. Most frequently they are cooked by boiling in the shell and are served shelled as part of a dish or with the shell on for the diner to remove. The best quality prawns are from the coldest waters and whilst warm water prawns are acceptable, they really do lack the fullness and flavour of its cold water cousin. Shrimps are often potted in butter; they keep well and make an excellent starter as the preparation can be done days in advance.

Crabs: A 2lb crab will yield about 12 oz of meat which is at its best when eaten cold. 12oz of crab meat should be enough to serve 2 people. Crab is at its best in the summer months and makes an excellent salad when mixed with some homemade mayonnaise. If you can’t buy direct from the fisherman, a crab should be purchased dressed, which means it has already been cooked and prepared. If you are fortunate and can get live crabs, the cooking and dressing must be done at home. Male crabs are best as they have bigger claws, which contain the best white meat. A darker moister meat can be found in the body of the crab.

Lobsters: Available for most of the year but are best in the summer months. The female has the most tender flesh and contains a lightly coloured roe under its tail that when cooked separately, can be used to make a rich lobster butter or a sauce. Fresh lobster is best served with nothing more than melted butter or a simple home made mayonnaise.

Molluscs: Have a strong shell and include;

Mussels, best in autumn and winter, mussels should be bought live and cooked on the day of purchase. If any open shells do not shut when lightly tapped, they should be discarded. Like wise any shells that are not open when cooked should be thrown away. It is possible to use frozen mussels but they lack in flavour. Live mussels must be washed in at least 3 changes of fresh salted water prior to cooking.

Oysters can be eaten raw or cooked and are at there best in the colder months of the year. Before you can purchase your oysters, they should have been subjected to purification. This is where the oyster is allowed to clean itself by pumping clean water through its system which helps to remove any pollution and grit. Fresh oysters are usually served ‘Au Naturel’.

Clams should be available for most of the year but are best in the autumn. They are sold live in the shell and are often eaten raw like the oyster, when about 12 clams per diner should suffice. Clams that are to be cooked should be washed well in at least 3 changes of water and steamed in a saucepan that has a tight fitting lid. Care should be taken to remove the sand from an open clam although soaking fresh clams in salted water for a few hours will help to remove it.

Shellfish should always be eaten fresh, so it is essential that you know the source of the product. Prior to eating, the shellfish should be completely washed.
